Go coconutty with these delish chocolate-coated treats!
We found this recipe and thought it would be great to share…literally!
Coconut flour is high in fibre, protein and healthy fats and its free from wheat and other grains that can be hard from some people to tolerate. Coconut flour is also low in sugar, carbs and calories and its low GI – WINNING!
To make these yummy balls of coconut goodness you need;
- 1 cup of coconut flour
- ½ cup of shredded coconut
- ¼ cup of coconut sugar
- ½ cup of coconut milk
- 1 x teaspoon of vanilla
- Pinch of salt
METHOD
Add everything into a food processor and blend.
Roll into small balls and place onto a tray lined with baking paper.
Put into the freezer for 30 to 60 mins. Then drizzle with this chocolate coating made from…
½ to 1/3 block of dark good quality chocolate
½ cup of coconut milk
Melt those two together until they are smooth. Using 2 spoons place the frozen balls into the chocolate mixture and coat. Place the coated balls back onto the baking paper and repeat until all are coated.
Refrigerate until the chocolate is set…then enjoy!
