Delicious Thai Chicken Lettuce Cups

500gm chicken mince
1 x tablespoon coconut oil
1 x teaspoon minced garlic
1/2 x cup chicken stock
1 x tablespoon fish sauce – heat frying pan & add coconut oil, fry garlic & chicken mince until browned add chicken stock & fish sauce.  

Cook 10 minutes until most of the liquid is evaporated set aside & cool slightly  

2 x spring onions – finely chopped
1/2 x cup green beans – or edamame beans
1 x carrot – grated
1/2 x cup coriander – chopped
1 x chopped red chilli – optional
1/2 x cucumber – cubed
1/4 x cup chopped almonds, peanuts or cashews
3 x tablespoon fish sauce
1 x tablespoon coconut sugar
1 x lemon or lime – juice & zest
1/4 x cup ground almonds
8 x whole lettuce leaves 

Blanch green beans & chop into small pieces.  

Add all ingredients – apart from ground almonds & lettuce into a large serving bowl.  

Add fried chicken mince mixture to vegetable mixture & stir to combine.  

Place a large spoonful of chicken mixture into a lettuce cup & sprinkle with ground almonds.
