Ingredients
1x cup dates – soaked for at least 1x hour
1 x cup rolled oats
1/2 x cup crunchy Peanut Butter
1/4 x cup brown rice syrup or honey
1 & 1/2 x cups roasted peanuts, almonds & cashews (save some for topping)
1/4 x cup coconut oil – melted
Method
grease & line a slice tin
soak dates in boiling water for 15mins
roast nuts in pan on medium heat until brown
in food processor put rolled oats & wiz until fine crumb emerges
add rest of ingredients apart from nuts & wiz until combined
roughly chop nuts & stir into mixture
press down into tin & put in freezer
make chocolate topping & add on top of slice
sprinkle with extra nut topping you have saved
place back in freezer to set topping & cut into squares – i made 16 pieces & store in freezer for treat time
